Ana’s Herbs Chicken Provolone Sandwich

Happy New Year Everyone!

With the new year comes everyone’s resolution for the new year. Whether it  be; weight loss, cut out soda, quit smoking, work out more, etc. I wish everyone well in obtaining your goals. My personal goals are to lose weight, work out more and cut out sodas. *fingers crossed* I will try to post some more encouraging and healthy recipes to assist you all along your way.

Today we have a recipe featuring Ana’s Herbs, a local Austin business which started out by selling  jars of salsa to neighbors, friends and co-workers. Ana’s was publicly unveiled at the 8th Annual Austin Hot Sauce Festival where Ana’s Salsa took first place. Ana’s Herbs is an all natural blend, low in sodium and has no MSG or preservatives. Greek oregano, rosemary, imported sweet leaf basil, and other spices.

Chicken Parmesan Sandwich

You Will Need:

2 boneless skinless chicken breast halves

2 tsp. Ana’s Herbs

1/8 teaspoon salt

1/8 teaspoon pepper

2 tablespoons olive oil

Sliced Red Onion

2 slices provolone cheese2 Italian rolls, split lengthwise

1/3 cup marinara sauce or meatless spaghetti sauce

Let’s Get Started!

Heat oil over medium heat and saute red onions until tender. Remove and set aside in a small bowl.

Season chicken with salt, pepper and Ana’s Herbs front and back sides. In the same oil, cook chicken over medium heat until no longer pink inside.

On a cookie sheet, lay your Italian rolls face up. One side, place chicken breast, onions and marinara sauce. On the other bun layer sliced provolone cheese.

Bake at 375 F for 10-15 mins or until cheese is melted.

Flip the cheese side of bread on top of the chicken side of bread and serve!
