ElephanTrunk Giveaway!

Hello Everyone!

I have been away from the blogging circle for a little while, but I do have an awesome giveaway for you! Forgive me now?? 🙂 I am doing a co-op with a fellow blogger and friend The Rosy Snail for this awesome giveaway.

Excerpt from Rosy Snail:  “So what is an ElephanTrunk? Well, they are made by Architectural Mailboxes. Architectural Mailboxes creates decorative mailboxes for your home. While the carry a wide range of wall mounted mailboxes and traditional “by the road” mail boxes, the ElephanTrunk is their first, full-size parcel drop. It’s also the newest product in their collection and I can’t tell you how honored I was to be able to review this product! ”

I personally think this would be amazing to have at my house. I live in a pretty safe neighborhood but I am always worried about packages being left on my doorstep. Most of the delivery services do not knock on the door or ring the door bell when they leave something there… it is very frustrating.  So a secure mailbox that only you have the key to, would be very handy. Please see The Rosy Snail’s full review of the ElephanTrunk Mailbox here.

American Flatbread Pizza

Hello Everyone!

I apologize for the long break in between posts, but sometime it is hard to get internet access, believe it or not. Today I have a review for American Flatbread, “homemade thin and crispy pizza baked in a wood fired oven.” Also have a giveaway for 2 coupons for FREE American Flatbread Pizza. Found this delicious pizza in my local whole foods store, but later on noticed it at HEB grocery stores. Love it when smaller companies break into the main stream market!

American Flatbread Mission Statement: It is the mission of American Flatbread to provide good, flavorful, nutritious food that gives both joy and health, and to share this food with others in ways sustainable to all.

 photo DSC_0184_zps1aa11686.jpg
This wonderful flat bread pizza contains all organic ingredients, such as: organically grown wheat, kosher salt, organic tomato sauce, mozzarella cheese, and the list goes on. Bottom line, all organic and delicious! I was very surprised at how much flavor this little pizza had! Definitely would recommend to anyone looking to still have pizza without giving up your organic diet / beliefs. Also this delicious dish is ready in 5-8 minutes. Preheat the oven to 425 F, place on the rack and *patiently* wait 5-8 minutes. VOILA! One really interesting fact about this company is that they build each of their flat bread ovens from the local geography. Their oven at the Marble Works in Middlebury has been built with a marble base, local to Middlebury. Also, their oven in Burlington Hearth is built of red rock, a common rock in the Burlington area.

Crofter’s Spread Review and “Jelly” Roll Cake Recipe

Hello All!

 photo DSC_0092_zps3a2bcee3.jpg

We have another wonderful review and giveaway today for Crofter’s Jam. A jam that is full of flavor and sweetened with Rainforest Alliance certified organic cane sugar.

 photo DSC_0064_zpsd7e94b2a.jpg

The two flavors that I tried were: Blood Orange and Morello Cherry. The Blood orange is a smooth jam, with a sweet and tart flavor. A blood orange tastes like an orange with a deeper taste. The Morello Cherry is also sweet and tart but I found it neat that it has the “casing” of the cherry still in the spread.

About Crofter’s: Crofter’s Organic has been making organic fruit products on the shores of the Georgian Bay in Parry Sound, Ontario, for 20 years.  They produce an extensive line of organic fruit spreads, conserves and jellies that are distributed throughout the U.S. and Canada.

Jelly Roll Cake Recipe

You Will Need:

4 Eggs, Separated

3/4 cup sugar

1 tablespoon vanilla

3/4 cup cake flour, sifted

3/4 teaspoon baking powder

1/4 teaspoon salt

Confectioners’ sugar, for dusting, sifted

1 cup jam or jelly, stirred well

Preheat oven to 400 degrees F.

In a small bowl beat egg whites until stiff but not dry and set aside.

In another bowl, beat the egg yolks until light. Gradually add the sugar and vanilla, and mix well. Mix together the flour, baking powder, and salt. Add the flour mixture to the egg yolk mixture.
 photo DSC_0076_zpscc51ebb1.jpg
Fold in the egg whites into the egg mixture.

 photo DSC_0080_zps63d3479b.jpg
Pour the batter into a 15 by 10 by 1-inch jelly roll pan lined with waxed paper / or a rectangle cake pan lined with tin foil and wax paper.  *When dealing with egg whites you need to make sure you FOLD, you don’t want to ruin those nice stiff peaks you just made, and have a dense cake*

Bake for 8 to 10 minutes or until the cake is golden.

Loosen edges of cake, flip cake onto a towel dusted with confectioners’ sugar. Gently peel wax paper (or tin foil) off cake.
 photo DSC_0083_zps1e59991b.jpg
Begin with the narrow side and roll the cake and towel up together. Cool cake on rack, seam side down, for 10 to 15 minutes.

Once cake has cooled, gently unroll and spread cake with jam or jelly and re-roll. Sprinkle with confectioners’ sugar or cover with whipped cream.

Tropical Traditions Coconut Oil Roasted Sweet Potatoes

Hello All!

I personally have never had sweet potatoes except for on Thanksgiving and smothered in marshmallows. Since the New Year generally brings resolutions of better health and weight loss, this is a perfect side dish for your baked chicken or fish dishes, very flavorful and tender.

Coconut oil has many uses, from cooking to home remedies and household uses. Since it is a stable cooking oil, one can simply replace unhealthy oils in their diet with coconut oil. Since it is a solid most of the time at room temperature or when refrigerated, it can be a butter or margarine substitute for spreads or for baking. Some body uses: lotion, hair conditioner, chap stick, lubricant, face mask, shaving cream.

Coconut Oil Sweet Potatoes

You Will Need:

1 1/2 tablespoons virgin coconut oil

1 3/4 pounds sweet potatoes, peeled and cut into 1/2-inch chunks

2 teaspoons light brown sugar, packed

3/4 teaspoon kosher salt

1/4 teaspoon ground black pepper

1/4 teaspoon grated nutmeg.

Let’s Get Started!

Pre heat oven to 350 degrees. Melt the coconut oil in a small saucepan over low heat, does not take very long.

In a large bowl, toss together potatoes, coconut oil, sugar, salt, pepper and nutmeg.

Spread the potatoes in an even layer on a large baking sheet or roasting pan. Roast, tossing occasionally, until soft and caramelized, about 1 hour.

Allow to cool and enjoy!

Alvarado St. Bakery Bread and Monte Cubano Sandwich

Hello again Everyone!

I am FINALLY feeling better after a week of being sick, yuck! Would not wish that on anyone.

Anyways, we have a review for Alvarado St. Bakery and giveaway. I personally am a white bread person, my “go to” is normally not wheat bread or anything other than white bread. Alvarado St. Bakery really impressed me. Their breads are full so of flavor and the texture is very pleasing to the palate. Their breads have a nutty whole grain flavor. Alvarado has a wonderful line of breads and products (pizza, tortillas) to suit your needs and wants. I personally am not sure if I will go back to white bread after this taste test! Also, an interesting tidbit, Alvarado St. Bakery is solar powered!

Now for the recipe. Now I have to gush a little bit about this. I was very skeptical on a fried sandwich that was dipped in eggs…but oh my goodness it was heavenly! Crispy bread on the outside, melted cheese, meat and crisp pickles on the inside. Delicious!

Monte Cubano Sandwich

You Will Need:

2 slices firm bread
1 to 2 teaspoons mustard
4 or 5 dill pickle rounds
2 slices baked ham
2 slices smoked turkey
1 thin slice Swiss cheese
1/2 tablespoon mayonnaise
1 large egg
2 tablespoons whole milk
1 tablespoon unsalted butter

Let’s Get Started!

Spread 1 slice of bread with mustard and top with pickles, meats, and cheese. Spread mayonnaise on remaining slice of bread and piece together sandwich.

Beat together egg, milk, and 1/8 tsp each of salt and pepper, then soak sandwich in egg mixture. Treat it like cooking french toast, let it coat the bread but don’t leave it in long enough to make it soggy.

Melt butter in a heavy medium skillet over medium-low heat. Cook sandwich, uncovered, until underside is well browned, about 4 minutes. Flip and cook remaining side, covered, until well browned, 3 to 4 minutes. Remove from heat and let cool.

Finally, DIG IN! And you can thank me later for showing you this recipe. 🙂

Prize: 2 Coupons for a free loaf of bread each

Happy Family Organic Superfoods Review and Giveaway

Hello Everyone!

I apologize for going so long without posting, but I have been sick. This is often a slight consequence of having school age children. My son came home sick last weekend, and now that he is feeling better, I came down with it too. Oy vey!

Tonight we have a review for Happy Family Organic Super foods, Happy Time products for toddlers. My children LOVE to snack. They, like most children, are bottomless pits with an insatiable appetite. So naturally I wanted to find them a healthy but filling snack. This is when I looked to the Happy Times products. Their snacks are 100% natural! Certain products like “Veggie Buddies” are Gluten free, and others are Nut free. So it just depends on what your child’s needs are and determining which snack would be best for them.

I reviewed the: Veggie Buddies, Sunny Buddies and Mixed Fruit Yogis.

Veggies Buddies – Carrot Orange Apple Chews. They are very fruity tasting and are chewy, similar to most gummy snacks. Oldest child said these were his favorite.

Sunny Buddies – Sunflower butter and berry jam bites. These little morsels tasted just like a good old fashioned PB&J sandwich! These were my favorite of the snacks.

Mixed Fruit Yogis – Freeze Dried Yogurt Bites. Theses snacks were very flavorful and fruity. Interesting thing is that they melted in your mouth! My daughter said these were her favorite, but she said she loved all of them.

Over all I was very pleased with the Happy Times snacks and the quality and flavor. I would recommend these snacks to any family striving to provide a healthy but tasty treat for their little ones!
