I personally think this would be amazing to have at my house. I live in a pretty safe neighborhood but I am always worried about packages being left on my doorstep. Most of the delivery services do not knock on the door or ring the door bell when they leave something there… it is very frustrating.  So a secure mailbox that only you have the key to, would be very handy. Good evening everyone!

I have a review for a wonderful product, Dr. Lucy’s Cookies! It is hard sometimes to find healthy snacks that are affordable and flavorful. Lucy’s has a line of cookies that are crisp, tasty and healthy. All of the cookies from Dr. Lucy’s are; Gluten free, Vegan, No peanuts, no tree nuts, 0g trans fat, 0mg cholesterol, non-GMO and all natural.

I received a variety of flavors, but I must rave about the Mint Chocolate and Maple Bliss flavors. The Maple flavor was definitely maple syrup tasting, very prominent. Crunchy, crisp and light texture as well. My personal favorite of the group is the Mint Chocolate Cookies, so delicious! The flavor profile was amazing and the texture was also light and crunchy. I would highly recommend these cookies to anyone, especially anyone with food allergies or watching their figure.

Hummus Recipe and Pretzel Crisps® Review

Good evening everyone!

Today we have an awesome review, giveaway as well as a recipe to go along with this wonderful product. Pretzel Crisps®, I’m sure most of you have seen in your local grocery stores in the chips aisle. They are my mother’s favorite thing to snack on and now have become mine as well. Pretzel Crisps® are very versatile, you can dip them, stack them with toppings or just eat them plain. They are pretty healthy as well. 🙂

Pretzel Crisps – Avg $3.49 per bag

Garlic Hummus

You Will Need:

2 (15-ounce) cans chickpeas, drained and rinsed
1/2 cup extra-virgin olive oil, or more as needed
1/2 lemon, juiced
2 tablespoons roughly chopped fresh parsley leaves
2 Tbl Minced Garlic
1 1/2 teaspoon salt
1/2 teaspoon dark Asian sesame oil
1/2 to 1 teaspoon ground cumin
12 to 15 grinds black pepper
1/4 cup water

Let’s Get Started!

In a blender combine all the ingredients except some parsley and paprika to be used for garnish.

Blend on low speed until smooth. You’ll have to stop the blender often to push down the ingredients. If the mixture is too dry and you’re having trouble blending it, add a few more tablespoons of olive oil to help things along.

Scrape the hummus onto a plate or bowl. Sprinkle the paprika over the top, scatter some parsley on top, and serve.

Simple Beer Bread and King Arthur Flour Review

It has been a month since Caitlin’s Confections debuted on the world wide web! Thank you to everyone who has supported me and participated in the posts and giveaways.

So tonight I have a review of King Arthur Self Rising Flour and for the readers, another giveaway for a free bag of King Arthur Flour coupon!

I have never cooked / baked with self rising flour before and I love it!  This self rising flour is absolutely amazing. I made pancakes with it the other day (Recipe Here) and they turned out so fluffy! I also used the self rising flour in this beer bread recipe. I definitely give the flour high marks in my book. 🙂

*Note: self-rising flour does not replace yeast; instead it replaces the need to add leavening (baking powder) to your recipe.

King Arthur Flour 5lb bag – $5.95 (in the local HEB it is about $3.50)

Simple Beer Bread

You will need:

3 Cups Self Rising Flour

3 Tbl Sugar

12 oz. Beer (I used a dark beer)

Butter for spreading

Let’s get started:

Pre heat the oven to 375 F.

Blend together all the ingredients in a medium bowl, making sure there aren’t any lumps.

Pour into a greased 9x5x3 bread loaf pan.  Bake for 45-60 minutes, depending on how brown you want it. Mine took about 50 minutes.

Slice, butter, serve and enjoy!

Garlic Lemon Chicken and True Citrus Review

Tonight I have another wonderful review and giveaway! What we have is True Citrus, a wonderful company dedicated to helping consumers find healthier alternatives in their dieting and food choices. I have a hard time giving up soda and replacing it with water. One way I am able to do this is by using water flavoring. True Citrus has several flavors they offer to flavor up that plain old water. My favorite is the Raspberry Lemonade flavor packet, so good! I have been really pleased with the selection I was sent to review, especially the water flavorings.

Garlic Lemon Chicken

You Will Need: 

6 chicken breasts (about 4 1/2 lbs)
2 cups flour
1 lemon, juiced

True Lemon Crystallized Lemon

3 1/2 Tbls. prepared minced garlic

1 medium onion, diced

vegetable oil
onion powder
garlic salt
black pepper
dried oregano
dried parsley

Let’s Get Started!

Put the flour in a gallon-sized zip-top bag and add in your chicken, seal the bag well. Shake it around to coat the chicken well with flour. Take each piece of chicken out of the bag. Shake off any excess flour. Lay the chicken out on a board or plate.

Pour about 1/4 inch of oil into a large, non-stick pan. Heat the oil for a minute or two over medium-high heat.

Add the  minced garlic and onion to the oil. Give the garlic, onion and oil a stir. Cook for a minute or two over medium-high heat.

When the oil starts to bubble, carefully put each piece of chicken in the pan. Your pan will be crowded, which is fine. Cook over medium-high heat until the oil starts to bubble again.

When it starts to bubble, season it by coating the top of the chicken with a thin layer of onion powder, garlic salt, lemon shaker, black pepper, dried oregano, and dried parsley. Cook for 3-5 minutes, making sure to lift the chicken pieces so the oil gets in between.

Flip the chicken and cook another 3-5 minutes. Again season the top of the chicken with the previous seasoning assortment. Add the lemon juice and let simmer for about 5 minutes longer. I had to let mine sit for awhile to get the golden brown crust. Cut the chicken to make sure it is cooked thoroughly and no longer pink.

Pair with a nice side of rice or mashed potatoes. Enjoy!

Salami Crostini Recipe and Creminelli Artisan Salami Giveaway!

Hello Everyone!

Today we have an amazing giveaway hosted by Creminelli. Also we have a recipe to showcase this amazing salami. This recipe is perfect for a dinner party, party appetizers or paired with a nice wine. The wild boar was my favorite of the set, very flavorful and sweet. I was surprised that the salami came in the casing still. I have never had artisan salami, only store bought. Creminelli has a short video on how to peel and slice the salami with ease. There was quite a bit of effort to get it peeled, but it sure was worth it! So tasty. 🙂

The amazing set of salami I received features: Wild Boar, Piccante, Sopressata, Casalingo, Barolo and Tartufo.

You will need:

Crostini bread (I used sliced Sub rolls)
1 Red Onion

Artisan Salami (Sliced and julienned)

1 can White Cannelloni Beans (Drained)

1 Tbl Minced Garlic

Salt and Pepper to taste

1 Tbl Olive Oil

Let’s get started!

Pre-heat your oven to 375 degrees. Slice your bread and brush lightly with olive oil. Place on a cookie sheet and bake for about 10-15 minutes or until slightly toasted.

Either with a mixer or food processor, blend the cannelloni beans, olive oil, garlic, salt and pepper.

Thinly slice the red onions and saute over medium heat until caramelized.

Once your components are ready, spread the cannelloni bean mixture over the toasted bread. Top with red onions and salami. Now you have a nice crunchy and savory appetizer for your guests.

Now you’re ready for a party! Enjoy!
